2 large boneless chicken breasts, cooked & finely shredded
16 ozs cream cheese softened
1 1/2 cups finely shredded sharp cheddar
1 tsp minced garlic
2 tablespoons chile powder
1 tsp oregano, rubbed
2 tsp smoked paprika
cayenne or Tobasco to taste
1 can Rotel tomatoes undrained
1 bunch fresh cilantro finely minced
4 green onions, chopped
In large mixing bowl mix cheeses until creamy & well-blended. Add seasonings; mix well. Add chicken,cilantro, green onions & Rotel. Mix. Refrigerate overnight for full flavor.
